We had the honour of providing catering for a round table discussion on local food related issues hosted by the Globe and Mail at UBC Boathouse. As befits such an event, we focused our menu on the finest local ingredients available to us. We used everything from Pemberton Valley Beef for a Beef Short Rib and Blue Cheese Mini Bun, Fraser Valley Lamb Carpaccio served on a Potato Crisp, delicate local Spot Prawn Wontons as well as a decadent Alsatian Tart that featured our own house smoked bacon. The event was organized by Betsy Cooper of B-Co Communications who did an amazing job!
