The Details


A client appreciation cocktail reception held at the beautiful Rocky Mountaineer Rail Station for 300 people. We had 11 servers on-hand to make sure guests were treated like medal winning athletes.

Seared, marinated beef carpaccio on a crisp crostini with tarragon aioli and crispy shallots

AAA beef tenderloin lightly crusted with cracked black pepper and oven-roasted to medium rare…served on a miniature Yorkshire pudding with horseradish crème fraiche and caramelized onions…served warm
Coconut Prawns
With a snappy blend of spice and a crisp coating of coconut and panko breadcrumbs…served warm with Tahitian vanilla chili dip

Fragrantly spiced and served with a spicy peanut dip
Smoked Salmon & Savoury Shortbreads
Black pepper shortbreads topped with dill crème fraiche, smoked salmon, fresh dill and lemon zest
Wild Mushroom Risotto Balls
Wild BC forest mushrooms, fresh herbs and risotto, stuffed with French Brie cheese…served warm
Grilled Scallops on Sweet Potato Latke
Jumbo sea scallops, lightly grilled and served on a crisp sweet potato latke with pineapple-papaya salsa
Pulled Pork & Mini Corn Muffins
Slow-roasted boneless pork…hand shredded and mixed with our own chipotle bbq sauce and served on a mini cornmeal muffin…served warm
